🥗 Pumpkin Glow Bowl Recipe

Ingredients
2 cups fresh pumpkin (cubed) or butternut squash
1 cup cooked quinoa (any color)
1 cup baby spinach or arugula
2 tbsp olive oil
1 tbsp pumpkin seeds or cranberries
½ tsp cinnamon
Salt & pepper to taste
Tahini-Maple Dressing:
2 tbsp tahini
1 tbsp pure maple syrup
1 tbsp lemon juice
1–2 tbsp warm water (to thin)
Pinch of sea salt
Directions
Roast the Pumpkin: Preheat oven to 400°F (200°C). Toss pumpkin cubes with olive oil, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, until tender and golden.
Cook Quinoa: If not already cooked, prepare quinoa according to package instructions.
Whisk the Dressing: In a small bowl, whisk tahini, maple syrup, lemon juice, and water until smooth and pourable.
Assemble the Bowl: Add quinoa and greens to a bowl, top with roasted pumpkin, drizzle with dressing, and sprinkle pumpkin seeds on top.
